Crispy tofu, for Tofu Pad Thai.

Press a block of extra-firm tofu under a plate and book/heavy object for 30 mins. Then, slice tofu into quarter inch thick slices. Toss slices with equal parts olive oil and lime juice. Sprinkle with paprika and toss to coat. Place on a lined baking tray and bake at 425F for 20-30 mins. Tofu is done when brown and crispy on both sides.

When prepared this way, tofu can be a great addition to pad thai, or a myriad of other dishes!
